Snickerdoodle Bars
INGREDIENTS:
1/2 cup unsweetened apple sauce (50/0)
6 tablespoons butter (270/12)
1/2 cup granulated sugar (0/0)
6 tablespoons egg whites (or 2 large eggs) (50/0)
1 tablespoon ground cinnamon
2 teaspoons vanilla extract (24/0)
2 3/4 cups flour (700/36)
1 1/2 teaspoons Cream of Tartar
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon sugar (optional)
DIRECTIONS for SCONES:
Preheat oven to 350º degrees.
In a large mixing bowl, cream butter and sugar for 4-5 minutes until light and fluffy. Scrape the sides of the bowl and add the eggs and vanilla. Cream for 1-2 minutes longer.
Stir in flour, cream of tartar, baking soda, and salt, just until combined.
Spread evenly into an 8" x 8" baking pan (prepared if necessary). If desired, sprinkle top with cinnamon sugar..
Bake for 35 minutes. Remove from oven and let cool in the pan for 5 minutes. Remove from pan and let cool down for additional 30 minutes.
Cut. Serve. Devour. Store in an airtight container for up to one week (if they last that long).
