Simple Crepes
INGREDIENTS:
1 cup flour (400 / 13)
1 tablespoon granulated sugar (0/0)
1 1/2 cups unsweetened cashew milk (38/1)
6 tablespoons egg whites (50/0)
DIRECTIONS for SCONES:
In a blender or bowl, blend/whisk flour, milk, egg, and sugar until creamy and frothy.
Refrigerate for a minimum of 30 minutes.
Heat a nonstick crepe pan/skillet on medium-low flame. When hot, spray with cooking spray to coat bottom of crepe pan/skillet. Pour 1/4 cup crepe mixture into pan, swirling pan slightly to make crepe thin and smooth.
Cook for one minute, or until bottom of crepe is light golden brown. Flip, cook for 30 seconds to 1 minute or until light golden brown. Set aside on a plate and repeat with remaining crepe mixture.
