Peanut Butter Cloud Cake Bites
INGREDIENTS:
1 1/2 cup (7.5 ounce) flour
1 teaspoon baking soda
2 teaspoons baking powder
2/3 teaspoon salt
1/4 cup (56 grams) butter
1/4 cup (61 grams) unsweetened apple sauce
1/4 cup (48 grams) granulated sugar
1/4 cup (48 grams) brown sugar
3 tablespoons (47 grams) liquid egg white (1 large egg)
1 teaspoon (15 grams) vanilla extract
1 cup (96 grams) powder peanut butter, reconstituted*
2 tablespoons (30 grams) mini chocolate chips
DIRECTIONS:
Preheat oven to 350º F
Combine the flour, baking soda, baking powder, and salt in a medium bowl. Whisk to combine, set aside.
In the bowl of a stand mixer, cream together butter, apple sauce, sugar, and brown sugar, about 60 seconds.
Mix in the egg and vanilla extract until combined, about 30 seconds.
Mix in the peanut butter until combined, an additional 30 seconds.
Add the dry ingredients to the wet, mixing until flour mixture is completely incorporated. Do not overmix.
Using a medium cookie scoop (1.5 tablespoons), portion out the dough on prepared baking sheets, lined with parchment paper.
Bake for 30 minutes, until edges are golden, but the middle is soft. Let cool on a wire rack for at least 10 minutes.

*Swap out the peanut butter for 1 cup canned pumpkin for a pumpkin version. Bake for the same time.
