Ken’s Hummus

INGREDIENTS:

  • 1 can (15 ounces) chickpeas, drained, washed and shelled

  • 1/4 cup fresh lemon juice (1 lemon)

  • 1/4 cup tahini

  • 1/2 large garlic clove

  • 2 tablespoons olive oil

  • 1/2 teaspoon cumin

  • 2-3 tablespoons water (optional)

DIRECTIONS for HUMMUS:

  1. In the bowl of a food processor, combine tahini and lemon juice. Process for 1 minute. Scrape sides and bottom of bowl, then process for additional 30 seconds.

  2. Add the olive oil, minced garlic, cumin and salt (to taste) to the whipped tahini/lemon juice mixture. Process for 30 seconds, scrape sides and bottom of bowl, then process for additional 30 seconds.

  3. Add half the drained/shelled chickpeas to the food processor and process on high speed for 1 minute. Scrape sides and bottom of bowl, and add the remaining chickpeas. Process for 1 to 2 minutes, or until thick and quite smooth. Add water to thin, if consistency is too thick.
