Cinnamon Apple Cake
INGREDIENTS:
Cooking spray for pan
2 apples, peeled, cored, and diced
Juice of 1/2 lemon
1/4 cup brown sugar (divided)
1 3/4 cups flour
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup butter
2 tablespoons unsweetened apple sauce
1/2 cup granulated sugar
6 tablespoons liquid egg whites
1 teaspoon vanilla extract
3/4 cup milk
DIRECTIONS:
Preheat oven to 350º and grease an 8” x 8” square pan with cooking spray (or a 9” springform pan). In a large bowl toss together apples, lemon juice, and 2 tablespoons brown sugar.
In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
In another large bowl using hand mixer (or in the bowl of a stand mixer), beat together butter, granulated sugar, and remaining 2 tablespoons brown sugar. Add egg whites a tablespoon at a time (or an egg at a time), beating well after each addition. Add vanilla and mix until combined.
Add half of the dry ingredients to the wet ingredients, beating until just combined. Pour in milk and mix until fully incorporated. Add remaining dry ingredients and still until just combined.
Pour batter into prepared pan. Sprinkle with optional coarse sugar.
Bake until toothpick inserted into the middle comes out clean, about 60 minutes. Let cool 10 minutes before removing from pan.
